Most cultures introduce fermented foods into their diet on a daily basis for their great value and benefit in our body. For example, sauerkraut is a very popular and traditional product in Germany just like kimchi is in Korea. In Spain we are not so used to using them in our dishes, but we also find them in brines such as banderillas, olives or gherkins.
