What are your expectations for the future of the organic sector?
The new generations are more aware of the need to bet on a healthy lifestyle that has a positive impact, not only on their body, but also on their environment. This will lead to an increase in consumption and per capita spending on the organic food basket.
What techniques or systems do you use to produce organic?
The idiosyncrasy of sea salt production deserves a separate chapter.
To obtain this mineral, what we do is conduct seawater through a circuit of large, shallow lagoons. Thanks to the action of the wind and the sun on these sheets of water, we manage to concentrate the salinity until the sea salt crystallizes. The result of this activity is the creation of an ecosystem based on a huge brackish water wetland that is the ideal home for hundreds of birds, fish, plants, reptiles, invertebrates, microorganisms, algae, among others.
Why do you think organic is so important?
I believe that the commitment to eco has benefits on many levels:
- For health: the absence of additives, not only in the final product, but also during the production process, and as little processing as possible, are key to having a product with greater nutritional density, tastier and that provides us with well-being.
- Out of respect for the environment and sustainability: organic production promotes the use of natural production techniques, increases biodiversity and promotes rural development.
- For quality: the rigorous controls and official certifications are the guarantee for the consumer.
