There are many seals that are proliferating to certify sustainability in restoration, although those that exist do so partially. In this way, some cover the product, others energy efficiency, waste management or use, to give some examples. And most of them are very focused on the kitchen and the product, without taking into account other aspects, such as the room, the operation, the staff, the suppliers, etc. Having the multiple existing seals to guarantee sustainability in restoration is not an operational or economically viable issue. Faced with this situation, CAAE and Restauranding have joined forces and have worked together to create a single label that encompasses everything:social, environmental, economic and institutional management of the restaurant .
